Peanut butter. Peanut butter. Peanut butter? Again? Yes! But only because I couldn’t resist the dark chocolate peanut butter screaming my name from the grocery store shelf. I could hear it clamoring above the noise of my children and the elevator music so I figured I should heed its call and give it a little purpose and meaning. Every jar of dark chocolate PB wants to be significant to someone, somewhere. Didn’t you know that? And this jar of PB made its mark in a batch of Dark Chocolate PB & Oatmeal Cookies.
I adapted this recipe slightly from Baking Bites by substituting the dark chocolate peanut butter for creamy or crunchy peanut butter and decreasing the sugar somewhat. I also used the dark chocolate peanut butter for the yummy ‘Peanut Butter Glaze’, of which I made a double batch so I could get a little wild with it (mainly because I l-o-v-e frosting and glaze). The glaze really does add a new dimension of flavor and fun for the kiddos (or save the fun for yourself).
I baked my cookies for exactly 11-minutes and they were perfect!
Dark Chocolate Peanut Butter & Oatmeal Cookies
1 c. AP flour
1 c. oatmeal
1/2 t. baking soda
1/4 t. salt
1/2 butter, room temperature or softened
1/4 c. granulated sugar
1/2 c . brown sugar
1 egg
1 t. vanilla extract
1/3 c. dark chocolate peanut butter
Preheat oven to 350°
Combine dry ingredients in a small bowl and whisk until blended. In a mixer, beat the butter and sugars until creamy. Add the egg and beat until combined, then add vanilla and peanut butter, mixing until all ingredients are combined well. Stir in dry mixture.
Drop cookies onto a non-greased baking sheet and bake for about 11-minutes or until they are slightly brown around the edges (mine had a little crunch on the outside, but were soft and moist inside). Cool on the baking sheet for 5-minutes before transferring to a wire rack. Cool cookies completely before glazing.
Peanut Butter Glaze
1/4 c. dark chocolate PB
1 T. milk
Whisk together and then place in a piping bag, plastic storage bag or a squeeze bottle for easy fun!
