Snickerdoodle Blondies

I am a sucker-and-a-half for snickerdoodles, but making cookies can get a little tedious around here with all the other busyness going on so when I noticed this recipe for Snickerdoodle Blondies from Kim @ Lovin’ from the Oven, I knew it was a must try! Kim had adapted them from another website, and mentioned they were too sweet for her taste. The original recipe called for 2 c. brown sugar and I decreased it by 1/2-cup and didn’t scrimp on the cinnamon (another great love of mine). And when it comes to cookies & bars, I’m also a big fan of ‘goo.’ My testers declared these ‘blog worthy’ right out of the oven, but next time I will probably bake them a little closer to 20 minutes than 25. They were somewhat dry for me, but definitely worth a second round!

Snickerdoodle Blondies
Adapted slightly from Lovin’ from the Oven

2 2/3 c. AP flour
2 t. baking powder
1 (heaping) t. cinnamon
1/4 t. ground nutmeg
1 t. salt
1 1/2 c. brown sugar
1 c. butter, softened
2 eggs, at room temp. 
1 T. vanilla extract
1/2 c. cinnamon chips
For topping:
2 T. white sugar
2 t. cinnamon
A pinch of turbinado sugar (if you have it)

Pre-heat oven to 350°

Stir dry ingredients together until well combined. Beat together brown sugar and butter until creamy, about 3-5 minutes. Add eggs one at a time, mixing after each addition. Add vanilla and stir or beat until smooth. Stir in flour mixture and cinnamon chips until all ingredients are well combined. Spread evenly in a 9×13, lightly greased pan. Sprinkle combined topping ingredients evenly across the top. Bake until top springs back, 20-25 minutes or longer if needed.

  1. Gasp! Perfection. Once upon a time, I bought what seemed to be strawberry blondies at a bake sale and devoured them in seconds–they were so delicious. I’ve never seen them again and am not sure which recipe is good on Google. Have a recipe for strawberry ones in addition to these fab cinnamon ones?
