Mom’s (crowd gathering) Basil Pesto

If you’re pesto fan, you only have to glance at the recipe to know this stuff is good. Unfortunately, the recipe can’t include the whole experience of enjoying my mom’s basil pesto in a crowd. Just imagine a spontaneous photo op while trying to keep your own fingers away and pushing back everyone else at the same time (see my brother-in-law’s hand in the background, positioned to dig in?). If stabbing by dipping utensil were a crime, a few of my crazy relatives would be guilty. And I should probably feel at least a little guilty for slathering a large portion of it on my slice of homemade pizza, but I don’t. You should never feel guilty for being good to yourself. Don’t ever let anyone tell ya differently. :-) Enjoy

Mom’s Basil Pesto
2 c. packed fresh basil
1/2 c. fresh Parmesan cheese, shredded
1/2 c. EVOO
1/2 c. pine nuts or walnuts
4 cloves fresh garlic, smashed
Pinch of kosher salt to taste

Grind nuts, garlic and cheese in blender. Begin packing in basil and drizzle in olive oil and salt to taste until all ingredients are well combined. Enjoy in private unless you are willing to share.

  2. Hi Amy, Just to let you know that I did try your mom’s wonderful pesto recipe yesterday and it turned out absolutely delicious…I’ve made 4 batches of it and frozen some since my basil plants were out of control! Wonderful recipe and thanks for sharing it, this one is a keeper:)
