My friend Rachel posted a recipe for Granola Energy Balls from The Marathon Mom yesterday on her FB page, commenting her boys ate one right after the other. As soon as I viewed the recipe, I knew this one was a go! I’ve been toying with a no-bake peanut butterish/oatmealy-type recipe for bars, but this one is even better in the form of balls. I adapted the recipe a little for the ingredients I had on hand and for extra crunch (great excuse to add wheat germ).
Next time, I think I’ll add dried cranberries or cherries. They really were a hit with the boys and I intend to keep them on hand for nibbling before and after running. Enjoy!
Variations: I made these again since posting this recipe and used 1/4 c. cinnamon-raisin peanut butter w/ 1/4 c. creamy peanut butter. These would also be great with chocolate peanut butter or honey peanut butter with added nuts, coconut and 1/2 c. M&M’s in place of chocolate chips.
Crunchy PB Power Balls
2 c. oatmeal
1/2 c. ground flax seed
1/2 c. wheat germ
1/2 c. creamy peanut butter
1/2 c. crunchy peanut butter
3/4 c. chocolate chips
1/2-2/3 c. raw honey
2 t. pure vanilla extract
1 t. cinnamon
Stir all ingredients together until well incorporated. Form into balls & refrigerate. For me, 1 recipe produced about 2-dozen balls, but I made them to fit little hands.

These look totally good – I love peanut butter. On occasion I eat it out of the jar with a spoon. I’ll have to try these.
PB is one of those things people either love or hate (or cannot eat for allergy reasons). I love it too! Usually eat a couple of spoonfuls myself while make PB&J’s. So yummy with honey or waffle syrup.
